Ingredients

  • 2 ripe mangoes , peeled, pitted, and diced
  • 1/2 small red onion, diced
  • 1 medium cucumber , sliced and diced
  • 1 jalapeno pepper , seeded and finely diced
  • 1/4 cup finely chopped cilantro leaves
  • 1 lime , juiced (about 2 tablespoons juice)
  • 1/4 teaspoon kosher salt
  • 4 salmon filet s
  • 2 tablespoons avocado oil, plus more for oiling grates or pan
  • 1 teaspoon garlic powder
  • Kosher salt , to taste
  • Ground black pepper, to taste
  • 1 lemon , cut into wedges

Method

  1. Prepare the salsa by combining the diced mangoes, red onion, cucumber, jalapeƱo pepper, chopped cilantro, lime juice, and 1/4 teaspoon kosher salt in a mixing bowl. Stir until combined and set aside.
  2. Pat the salmon fillets dry with paper towels. Coat all sides with avocado oil, then season evenly with garlic powder, kosher salt, and ground black pepper to taste.
  3. Preheat an outdoor grill or indoor grill pan to high heat and brush the grates or pan with oil.
  4. Place the salmon flesh-side down on the grill and cook for 3 minutes (closing the lid if using an outdoor grill). Carefully flip using a spatula and cook for an additional 2 to 5 minutes, depending on fillet thickness.
  5. Remove the salmon from the heat and allow it to rest for 2 to 3 minutes.
  6. Squeeze fresh lemon wedges over the salmon fillets and top each with a portion of the prepared mango salsa before serving.
